After you set up your Someday/Maybe view, it will appear in your list of custom views. Click that list name to see the Someday/Maybe tasks.

Entourage uses Low Priority as the Someday/Maybe flag. Assign Low Priority and the task stays in your Someday/Maybe list (and out of most other lists) until you change the Priority.
